This Olive Oil is almost zesty and light. It definitely has a hint of citrus like flavor. If you drown your food in it by accident or otherwise, it kindly does not sit heavy in the belly or on the palette. It really is a uniquely delicious break from common Spanish and Italian olive oils.

I read Jimmy Carter's book We Can Have Peace in the MIddle East and have a friend who just got back from documenting things in Palestine and Gaza. WIth the Palestinian suffering being the poster child recruitment tool of terror groups, I feel Fair Trade in this region is as critical as it gets.
