This is Higher Grounds' first year purchasing Maria's natural process coffee, and we already know it won't be the last. This coffee scored the highest among the Honduran microlots we've purchased this year, a sweet and exciting addition to our Apex Series lineup.

Modern unflavored coffees, unlike traditionally roasted ones, often showcase a wide range of decadent flavors that evoke memories of our favorite desserts. Because tasting notes are more about impressions than exact flavors, we roasters strive to capture them as accurately as possible. It’s a challenge—much like trying to describe the taste of Grandma’s famous blueberry cobbler or that perfectly tangy lemon meringue pie you could never quite match.

Maria's natural process coffee captures that kind of nostalgic, confectionary perfection.

 

María Trancito Argueta is one of the trailblazers in her community, embracing the philosophy and organic practices taught by COMSA. On her farm, La Encantada, she implements organic management practices and meticulous harvesting techniques.

Maria selectively picks only the ripest cherries, carefully hand-sorting and floating them to remove any damaged or less dense beans. Her detailed process results in an outstanding, single-producer micro-lot coffee.

Maria delivers her dried coffee to COMSA's warehouse and dry-mill facility, where it is received, cupped, and selected for export. The coffee is hulled and sorted by density and color, ensuring the highest quality before shipping.

COMSA’s state-of-the-art cupping lab and certified Q graders rigorously check each batch, guaranteeing traceability and quality control throughout the post-harvest process. This meticulous preparation is key to securing higher prices for producers like Maria, supporting her commitment to exceptional coffee production.
